Biscuits

Because three people have now called me for this recipe, here it is (Christy can add this to the recipe book also):

Buttermilk Biscuits – Alton Brown

Preheat oven to 450

Mix:

2 cups flour

4 teaspoons baking powder

½ teaspoon soda

1 teaspoon salt

Grate:

½ stick butter (4 tablespoons) this should be frozen and grate it like you would cheese. Then mix this in with the dry ingredients. Rub the butter into the dry ingredients until about half disappears and half is still the size of peas. Place this bowl in the freezer while we wait.

Beat together well:

1 cup buttermilk (as much fat as possible – none of this skim stuff)

1/3 cup plain yogurt (full fat or low fat – not skim here either)

1 large egg

Combine the two bowls by pouring the wet mix onto the dry and mix well. The dough will be sticky here but don’t add too much flour when rolling out. (Alton uses wax paper and folds it like a trifold wallet three times.) Bake for 15-17 minutes and you can brush them with butter when there are about 5 minutes left if you want.
